Risotto au butternut, pesto de sauge et chips de jambon cru…ou la recherche d’un équilibre de saveur

Les « risotti », on aime ça !… après le risotto primavera, celui au safran et légumes d’hiver, le classique aux bolets et l’indécent au vacherin mont d’or…en voici un qui met les cucurbitacées à l’honneur. Cela fait plusieurs hivers que je tente le risotto au butternut. Le résultat était pas mal mais pas vraiment convaincant, un peu trop doucereux à mon goût. C’est en me rappelant hier soir d’un post chez “le Confit c’est pas gras” qui faisait l’éloge du pesto de sauge fraîche, que m’est venue l’idée d’agrémenter mon risotto au butternut non pas de simples feuilles de sauge séchée comme je le faisais d’habitude mais d’ajouter à mon risotto une touche de pesto de sauge fort en goût qui viendrait relever la douceur du butternut. Et bien ce fut une réussite et j’ai hâte de vous présenter ce risotto!

Bien que cette recette n’ait pas été concue pour un repas de fête, j’imagine que le risotto serait parfait servi en entrée avec des saint-jacques rôties ou en plat principal en accompagnement d’une viande blanche (dinde ou belle pièce de veau en cuisson lente). Quoi qu’il en soit, saint-jacques ou non, ce mets familial et réchauffant a bien sa place en ces jours de grand froid.

Recette pour 3 personnes

Ingrédients

  • 400g de courge butternut
  • 1 oignon
  • 250g de riz à risotto de très bonne qualité (carnaroli ou arborio)*
  • 8dl à 1l de bouillon de légumes corsé bien chaud
  • 1dl de vin blanc
  • 2cs de crème soja ou demi-crème de vache
  • 4 tranches de jambon cru

Pour le pesto de sauge fraîche

  • 6-10 feuilles de sauge fraîche
  • 1 petite gousse d’ail dégermée
  • 2cs de jus de citron
  • ½ cc de zeste de citron
  • 1cs d’huile d’olive
  • 25g de pignons (dorés à la poêle sans matière grasse)
  • 3cs de parmesan rapé
  • sel, poivre

Marche à suivre

  1. Préparer le pesto de sauge : mixer tous les ingrédients, réserver sans trop goûter (sinon plus de pesto…. ;) )
  2. Emincer l’oignon, éplucher la courge et détailler-la en petits** dés.
  3. Faire revenir l’oignon et les dés de courge dans une cuillerée d’huile dans une casserole 3-5min.
  4. Lorsque les oignons sont tendres, ajouter le riz et le laisser suer jusqu’à transparence.
  5. Verser le vin blanc, et dès sa totale absorption, commencer à mouiller le risotto avec le bouillon. Ajouter petit à petit des louchées de bouillon en remuant constamment. Le risotto nécessite environ 20 min de cuisson en tout.
  6. Ce faisant, faire revenir à feu très vif des ,,épluchures’’ de jambon cru dans une poêle sans matière grasse jusqu’à qu’elles soient bien croustillantes.
  7. Lorsque le riz est est al-dente (encore légèrement croquant à l’intérieur), verser une dernière louchée de bouillon, le pesto, la crème soja, une pointe de sel, du poivre, bien remuer et laisser reposer hors feu 2 minutes.
  8. Servir le risotto encore bien crémeux dans des assiettes préchauffées et parsemer de chips de jambon cru. Bon appétit !

* Celui d’hier a été préparé avec l’excellent « riso di grumolo delle Abadesse », riz carnaroli superfin issu du mouvement slow food que l’on trouve dans les grandes coop. Si vous êtes amateur de risotto, essayez plusieurs sortes de riz et vous découvrirez de grandes différences de qualité… On comprend ainsi pourquoi l’on passe dans certains magasins d’un paquet à CHF 2.50 à d’autres près de CHF 14.

** Il ne faut pas négliger la découpe de la courge… les morceaux doivent être petits. Si vous n’avez pas la patience, vous pouvez faire de plus gros cubes et les précuire 5 min à la vapeur.
