Gratin de crozets poireau-jambon-fromage…un plat régressif

Régressif : adj. « Qui va en arrière, qui constitue une régression ». Régression : nom. fém. « évolution vers le point de départ, recul ». Assez de définition, tout ça est bien négatif ! Quand je dis plat régressif, comprenez plat qui vous rappelle votre enfance ou qui vous fait dire que le vie est plutôt belle, qui vous réchauffe le cœur quoi ! J’aurais aussi pu dire plat réconfortant. Ce gratin, c’est tout ça… bien moelleux, gratiné à souhait, quasi indécent de fondant…je vous laisse imaginer…En tous cas, la trilogie poireau, jambon, fromage est parfaite !

Plat pour 4-5 personnes

Ingrédients

  • 400g de crozets de sarrasin*
  • 2 poireaux
  • 150g d’un bon jambon arrière (jambon blanc)
  • 2/3 cc de sel
  • poivre
  • ½ cc de noix de muscade râpée
  • 1,7dl de demi-crème
  • 150g de fromage** (gruyère, comté, etc…)

Marche à suivre

  1. Préchauffer le four à 220°.
  2. Faire bouillir un grand volume d’eau salée. Ajouter les crozets, remuer jusqu’à ébullition et laisser cuire 15min.
  3. Parer les poireaux: ôter la partie supérieure du vert (env. 15cm), ôter la base et couper le reste en demi rondelles.
  4. Etuver (à petit feu) à couvert le poireau dans une petite casserole dans un peu d’huile d’olive et 2cs d’eau pendant 12 min. Remuer de temps à autre.
  5. Couper le jambon en petits morceaux.
  6. Râper le fromage.
  7. Egoutter les crozets, les mettre dans un plat à gratin, ajouter le jambon, les poireaux, et 1/3 du fromage, la noix de muscade, saler, bien poivrer, et bien mélanger. Arroser ensuite de crème, mélanger à nouveau.
  8. Parsemer le tout du reste de fromage et enfourner en haut du four pour env. 10min.
  9. Bon app’ !!!

*les crozets sont des pâtes savoyardes. L’ingrédient principal est le sarrasin, mélangé à de la farine de blé dur. J’aime bien en ramener quand je vais en vacances en France. Vous pouvez sans autre les remplacer par des cornettes ou fusilli.

** J’avais un paquet de mélange à fondue à terminer…d’où l’idée de ce gratin… et c’était parfait ! Comme quoi les restes font des merveilles!
