Burger Party!

Samedi on a réuni quelques amis et fait une burger party ! La junk food y a que ça de vrai, surtout quand tout est fait maison, épicé à souhait et frais ! Je ne m’étais jamais lancée dans la réalisation des buns…mais j’ai suivi à la lettre la recette du blog le Pétrin, et ils étaient parfaits !!! Malheureusement, je n’ai plus pensé à les faire poser tout seul derrière l’objectif après cuisson…mais d’après les hôtes « on aurait dit des vrais » ! Je ne peux donc que vous les recommander…. Pour accompagner ces jolis pains, des hamburger de bœuf maison bien sûr, savamment épicés et pesés, des oignons frais, des tomates pas de saison (j’avoue, lancez moi des pierres), des jeunes pousses d’épinard, du bacon grillé, du gruyère, du tzatziki (j’avoue 2)…et pour les adeptes, un bon vieux ketchup, of course. Miam, quel régal !

La recette pour 10 buns* (tirée du blog le Pétrin)

  • 600g farine blanche
  • 180g lait entier
  • 150g eau
  • 1 oeuf
  • 2cs d’huile
  • 25g levure de boulanger (fraîche)
  • 1cc sel
  • 1cs sucre

Marche à suivre (je la cite mot pour mot car l’explication est très claire)

  1. Dans un saladier, mélanger la moitié de la farine avec la levure, le sucre et le sel: creuser un puits, y verser les liquides, l’œuf et l’huile. Mélanger 1 à 2 minutes pour amalgamer les ingrédients puis ajouter petit à petit la farine restante jusqu’à ce que la pâte forme une boule molle mais qui se détache des parois. Verser sur un plan de travail fariné et pétrir vigoureusement jusqu’à obtention d’une pâte lisse, souple et élastique. Mettre la pâte en boule dans un saladier huilé, couvrir avec un linge humide et laisser lever 1h30 environ. (N.B. Cette étape peut se réaliser à la Machine à Pains ou au robot.)
  2. Verser la pâte sur un plan de travail légèrement fariné, l’écraser doucement avec la paume de la main puis diviser en 10 morceaux de même poids (environ 100g). Former des boules et laisser détendre sous un torchon 5 à 10min.
  3. Pendant ce temps, former une boule de papier absorbant et la mouiller, réserver sur le plan de travail. Déposer sur le plan de travail différentes sortes de graines selon les goûts: sésame, pavot noir ou bleu, cumin, etc… (Pour moi, c’était sésame uniquement).
  4. Bouler de nouveau chaque pâton, aplatir légèrement et presser la partie supérieure sur le papier absorbant humide, puis sur les graines et déposer sur une plaque de cuisson chemisée de papier sulfurisé ou simplement graissée. Couvrir et laisser lever environ 1h.
  5. Préchauffer le four th7 (200°C) avec une coupelle d’eau pour créer une atmosphère humide.
  6. Enfourner les buns et cuire 15-20min jusqu’à ce qu’ils prennent une belle couleur blond doré.

La recette des hamburger de bœuf*

Soit pour 5 personnes env.

  • 900g d’une bonne viande hachée pur bœuf (compter env. 75g par steak)
  • 1 œuf
  • 1-2 cs de farine blanche
  • 1 oignon haché
  • 1bouquet de persil haché
  • 1 bouquet de ciboulette haché
  • 1cc sel
  • ½ cc de paprika fort
  • ½ cc de curcuma
  • poivre

Marche à suivre

  1. Mélanger bien tous les ingrédients jusqu’à que la farine et l’œuf soient bien incorporés.
  2. Former des steaks de 75g à l’aide d’un cercle à pâtisserie, bien aplatir la viande.
  3. Faire revenir les steaks quelques minutes de chaque côté dans une poêle anti-adhésive.

Recette de tzatziki (pas trop aillé, idéal pour les burger)

  • 1 concombre
  • 8cs de yaourt nature
  • ½ à 1 cc de sel
  • poivre
  • 1 gousse d’ail

Marche à suivre

  1. Râper finement le concombre avec peau (ou passer au mixer), puis essorer la chaire dans un linge propre.
  2. Mettre dans un bol, ajouter tous les autres ingrédients et mélanger.

Conseils

Découper les buns en deux dans la largeur, déposer 1-2 tranches de gruyère sur la partie inférieure du pain et passer 2 min au four. Garnir ensuite les pains comme bon vous semble… C’est encore une histoire à mettre tout sur la table et faire bosser chacun ! Succès assuré !

*Compter env. 2 buns par personne. Certains mecs en ont pris 3 !!

    When I originally left a comment I seem to have clicked the -Notify me when new comments are added- checkbox and now every time a comment is added I receive four emails with the exact same comment. Is there an easy method you can remove me from that service? Thanks.
