Tiramisu au pain d’épices et noix de pécan en verrine

Vous l’avez peut-être déjà remarqué, nous avons toutes deux un plus grand penchant pour les mets salés que pour les mets sucrés… Mais il y a quelques exceptions! La recette ci-dessous, réalisée par mon mari chéri, grand fan de tiramisu, pendant les fêtes de fin d’année est tout simplement délicieuse et fait grande impression servie dans des jolis petits verres…

Recette pour 6 personnes

Ingrédients

  • 400 g de mascarpone
  • 4 oeufs frais bio
  • 150 g de sucre
  • 200 g de noix de pécan
  • 13 tranches de pain d’épices*
  • 1 grande tasse de thé Earl Grey

Marche à suivre

  1. Concasser grossièrement les noix et les faire dorer dans une poêle avec 20 g de sucre. Laisser refroidir.
  2. Battre le reste de sucre avec les jaunes d’oeufs dans une grande terrine jusqu’à ce que le mélange blanchisse. Ajouter le mascarpone et fouetter vivement.
  3. Monter les blancs d’oeufs en neige avec 1 pincée de sel jusqu’à ce qu’ils soient bien fermes, puis les incorporer délicatement à la préparation.
  4. Imbiber 12 tranchess de pain d’épices dans le thé. Emietter la dernière tranche et réserver.
  5. Confectionner les 6 verrines en couches sucessives: mettre la moitié des tranches de pain d’épices, verser dessus la moitié de la préparation, mettre le reste des tranches de pain d’épices, les noix grillées, puis le reste de la préparation. Parsemer enfin au sommet des miettes de pain d’épices et quelques noix. Réserver au moins 4 h au frais avant de savourer.

* Si vous avez la possibilité, je vous recommande d’utiliser un pain d’épices artisanal ou encore mieux fait maison, votre tiramisu en sera plus parfumé. Sinon, vous pouvez vous procurer un pain d’épices tel que ceux fabriqués par la célèbre pâtisserie bruxelloise Dandoy et vendus en Suisse chez Globus.

    Je trouve toutefois ce tiramisu légèrement trop sucré, mais cela est certainement dû au fait qu’il manquait les blancs d’oeufs et que j’ai utilisé le pain d’épice (au miel…) de la Migros. Sinon, avez-vous d’autres recettes de tiramisu pour l’été? J’adore ce dessert sous toutes ses formes!
