Avant tout… 1000 excuses d’avoir délaissé notre blog si longtemps! Il faut dire que Ségo est bien prise ces temps avec la rédaction de son travail universitaire et que de mon côté, j’ai profité d’une semaine de vacances pour partir en vadrouille, loin des ordinateurs! Bref, nous voilà de retour, avec cette fois la découverte d’une plante et d’une petite recette que certains d’entre vous connaissent déjà: la fameuse tartine à l’ail des ours du Festival du Lombric*!

L’ail des ours, une plante de saison

Tantôt utilisée comme plante médicinale, tantôt utilisée comme herbe aromatique, l’ail des ours, que l’on trouve dans les sous-bois feuillus humides, est source de vertus et de plaisirs gustatifs.

En auto-médication, cette plante fait baisser la tension, prévient l’artériosclérose, facilite la digestion et est vermifuge. En quelques mots, elle est idéale pour une petite cure dépurative au printemps!

Côté cuisine, elle enrichit les soupes, les salades, les pâtes mais aussi les mets les plus fins. Un petit conseil toutefois avant de vous lancer à la recherche de cette plante à l’odeur caractéristique. Ne la confondez pas avec les feuilles des colchiques qui ne sont pas encore en fleurs à cette saison ni celles du muguet, toutes deux extrêmement toxiques! La fameuse tartine du Lombric

Mélanger dans une terrine environ 100g de beurre, un petit bouquet d’ail des ours fraîchement cueilli, lavé et ciselé, 3 bonnes pincées de sel et un peu de poivre du moulin. Etaler sur une 1/2 baguette, couper à la taille souhaitée et enfourner à 180°C pendant 5 à 10 minutes. Déguster aussitôt!
