Bonjour bonjour! De retour de Bretagne, je vous apporte un peu d’océan dans vos assiettes! Mmm… rien de telle qu’une petite cocotte préparée avec amour sentant bon le iode et l’air marin! Cette recette-là est une grande tradition dans notre famille… Pour nous, c’est comme ça que les moules sont les plus exquises: à la fois charnues et croquantes, tout en étant délicieusement accompagnées… A vos fourneaux chers cuisiniers!

Recettes pour 4 personnes

Ingrédients

  • 2 kg de moules fraîches
  • 2 grosses pommes de terre coupées en petit dés
  • 200 g de lardons
  • 250 g de champignons de Paris coupés en lamelle
  • 1 bel oignon rouge
  • 1 petit bouquet de persil finement hâché
  • quelques brins de ciboulette
  • 1.5 dl de vin blanc sec
  • 2 dl de crème de soja

Marche à suivre

  1. Cuire les pommes-de-terre à la vapeur.
  2. Faire revenir dans un peu d’huile d’olive les oignons, les lardons et les champignons dans un fait-tout. Ajouter en fin de cuisson les pommes-de-terre cuites et la crème de soja. Réserver.
  3. Cuire les moules dans une grosse cocotte avec le fond de vin blanc et la moitié du persil. Une fois les moules ouvertes, oter un peu du jus de cuisson puis ajouter le contenu du fait-tout.
  4. Parsemer du reste du persil et des brins de ciboulette et servir aussitôt.

A accompagner, bien entendu, d’une bolée de cidre bien frais!
