Méli-mélo d’asperges vertes, parmesan, chips de jambon cru et crème de ricotta

Un peu too much mon titre ?! Tempis, j’assume ! Cette recette, sous ses airs de nouvelle cuisine branchouille, se révèle en réalité simple, fraîche et parfumée. Facile à réaliser, elle peut aussi bien être servie en entrée qu’en repas principal accompagnée d’une salade verte. La saison des asperges étant tellement courte, il faut profiter et ne pas hésiter à la tester! ;)

Recette pour 4 personnes en entrée (ou 2 en plat principal accompagné d’une salade et de tranches de pain)

Ingrédients

Fond pour la crème de ricotta

  • 1 oignon nouveau émincé
  • 1cs d’huile d’olive
  • 1 gousse d’ail pilée
  • 1dl d’eau
  • 3cs de noilly praz (ou vin blanc)
  • ½ cc de sel
  • 3 brins de thym

  • 250g de ricotta
  • brins de ciboulette ciselés
  • sel, poivre

Asperges

  • 20 aspergers vertes
  • 1cs d’huile d’olive
  • 30g de parmesan en 1 morceau
  • 6 tranches de jambon cru

Marche à suivre

  1. Faire revenir 2min l’oignon dans l’huile d’olive dans une petite casserole. Ajouter l’ail, l’eau, le noilly praz, le sel et le thym, porter à ébullition et laisser réduire jusqu’à l’obtention de 3cs de fond. Passer à la passoire fine et ne garder que le jus.
  2. Couper les extrémités des asperges, éplucher à 1/3 et couper-les en tronçons de 7cm. Réserver les têtes à part.
  3. Plonger les tronçons d’asperges dans une casserole remplie d’eau bouillante. Au bout de 3 min, ajouter les têtes. Cuire en tout 9 min.
  4. Préparer un saladier rempli d’eau froide à laquelle on ajoute 5 glaçons. Vider l’eau des asperges, bien les égoutter, puis les plonger dans l’eau glacée 2-3min*. Egoutter-les, placer-les sur du papier absorbant dans une assiette creuse.
  5. Pendant que les asperges cuisent, mélanger la ricotta au fond obtenu, saler, poivrer, ajouter la ciboulette et rectifier l’assaisonnement si besoin.
  6. Préparer des copeaux de parmesan à l’aide d’un couteau économe. Réserver.
  7. Réaliser des épluchures de jambon cru avec les mains. Les faire revenir1-2min à feu vif dans une poêle sans matière grasse, ôter de la poêle et réserver.
  8. Faire sauter les asperges 1-2 min dans la poêle dans une bonne huile d’olive. Ajouter de la fleur de sel plutôt généreusement, poivrer, bien mélanger.
  9. Dresser les asperges sur une assiette préchauffée. Parsemer de copeaux de parmesan et de chips de jambon cru. Servir avec la crème de ricotta (dans un verrine** ou simplement à côté/au-dessus des asperges). L’idée est de tremper les asperges dans la crème de ricotta, régal assuré !

*Ceci leur permet de garder leur belle couleur verte et stoppe la cuisson net.

** S’aider d’une poche à douille avec gros embout pour dresser les verrines.
