Sauté de boeuf aux asperges ou Lil tente la cuisine asiatique!

Si comme moi, vous n’êtes pas des pros de la cuisine asiatique et que manger avec des baguettes représente pour vous un vrai casse-tête, alors cette recette est pour vous! C’est vite vu, j’adore découvrir chez les autres (et en particulier chez Dame Pau!) les nouilles soba, shabu-shabu et autres délices, mais l’utilisation d’ingrédients aux noms exotiques reste pour moi un mystère. Donc, voilà une recette qui emprunte quelques idées d’Extrême-Orient mais qui est avant tout simple, rapide et si bonne!

Recette pour 2 personnes (et un petit reste pour le lendemain!)

Ingrédients

  • 200 g d’émincé de boeuf
  • 1 botte d’asperges vertes de 500 g* **
  • 1 oignon nouveau
  • 2 cs de sauce aux huîtres
  • 1 cs de sauce soja
  • 2 cs d’eau
  • 1 cs d’huile de sésame
  • 1 cs d’huile de tournesol ou arachide
  • du riz blanc en accompagnement

Marche à suivre

  1. Couper les asperges en tronçons de 3 cm de longs et l’oignon en lamelles, y compris la verdure.
  2. Faire revenir le boeuf à feu vif dans un wok enduit d’huile de sésame et de tournesol pendant 5 minutes. Ajouter l’eau, les asperges et l’oignon. Remuer et laisser cuire 3 minutes à couvert. Verser ensuite les sauces soja et aux huîtres. Faire mijoter 1-2 minutes.
  3. Et voilà, c’est déjà fini! Servir de suite avec un riz blanc parfumé.

* On pourrait tout à fait imaginer mélanger les asperges avec d’autres légumes primeurs du moment, comme des épinards ou des carottes. Personnellement, je n’avais que des asperges… Et leur production -locale- est si courte! Profitons-en!

**Après remarque d’une lectrice, je conseille de précuire les asperges 3-4min avant de les ajouter au boeuf, sinon le boeuf risque d’être trop cuit (s’il doit attendre ques les asperges soient cuites).
