Cela faisait une année que mon mari avait découpé dans le journal “Le Temps” un article sur un passionné d’halieutique* qui fumait lui-même son saumon et faisait découvrir à un public de fins connaisseurs des goûts uniques. Dimanche matin, nous nous sommes donc rendus en famille à Servion, dans le Jorat, pour faire connaissance avec cet alchimiste et découvrir son fumoir artisanal. Nous avons été accueillis par un homme chaleureux, au parcours professionnel riche et varié, dans ce qui pourrait presque être considéré comme un carnotzet.

Le concept

Après avoir élaboré des produits pendant cinq ans dans leur maison familiale, les fondateurs d’Armoire à Brume ont fait construire des locaux de production modernes dans une jolie ferme au coeur du village de Servion. “L’esprit pêche” règne dans ce fumoir artisanal dédié à Pépé, aujourd’hui au paradis des pêcheurs, grand amateur. Des photos prises aux quatre coins du monde présentent les prises parfois spectaculaires du propriétaire et de ses amis.

Les produits

Afin de proposer le meilleur, les matières premières sont soigneusement choisies en fonction de leur origine et leur qualité. Aucun agent conservateur n’est employé et les déchets sont recyclés. La spécialité sortie de ce fumoir est un saumon parfumé au miel, sirop d’érable, poivre du Sichuan, coriandre, sel marin et whisky. Il est présenté sur une planchette de bois suisse sérigraphiée par un atelier protégé de la région. La patron suggère de le couper en tranches de 5 à 6 mm et de le déguster avec un filet d’huile d’olive à la vanille et un pain complet, accompagné d’un vin blanc sec ou, pour les amateurs, d’un whisky.

Magret de canard à la raisinée ou au poivre rose complètent délicieusement l’offre. De mémoire, je n’ai jamais goûté une viande fumée si tendre… La palette des produits s’est récemment élargie avec un onglet de boeuf au caractère authentique et racé.
