Aubergine, courgette et ricotta en millefeuille

J’adore la courgette farcie… or ici pas facile de trouver de grosses courgettes qui s’y prêtent. Je raffole de notre recette de cannellonis d’aubergine à la ricotta… mais sans machine à découper, ça prend du temps de faire de longues et fines tranches d’aubergine et hier pas la motive de m’y coller… Du coup, j’ai opté pour un mix des deux : des aubergines, des courgettes et la divine farce à la ricotta. Et pourquoi pas, tiens, m’inspirer d’une recette vue dans mon fétiche Légumes faciles* et cuire le tout dans des ramequins individuels façon millefeuille? Ou mieux encore dans mes petites cocottes que j’utilise trop peu souvent ? Paf, voilà ma recette en tête !

Le résultat : un véritable délice qui fond sous la dent et qui sent vraiment l’été !

Recette pour 5 ramequins individuels

 IngrédientsMillefeuille d'aubergine, courgette et ricotta

  • 1 aubergine assez dodue mais pas très longue
  • 2 courgettes
  • 250 g ricotta
  • 40g parmesan râpé
  • 10 feuilles de basilic ciselées
  • 1 gousse d’ail
  • 1 pincée de paprika
  • sel, poivre
  • huile d’olive

Coulis de tomate

  • 3 tomates
  • ½ gousse d’ail
  • 1cc de sucre
  • ½ cs d’huile d’olive
  • sel, poivre

Marche à suivre

  1.  Préchauffer le four à 200°.
  2. Eplucher l’aubergine et couper-la en tranches** d’env. 8mm. Etaler les tranches sur un plaque allant au four et recouverte de papier de cuisson. Saler légèrement les aubergines, recouvrir d’un linge et laisser dégorger 15min.
  3. Pendant ce temps, découper les courgettes en rondelles et les faire colorer 1 min de chaque côté à feu vif dans un filet d’huile d’olive à la poêle. Elles ne doivent pas rendre d’eau, il faut donc s’y prendre en 2-3 fois (ne pas cuire tout à la fois). Saler, poivrer.
  4. Mélanger la ricotta, le parmesan, l’ail pressé, le basilic, le paprika, saler, poivrer. Mélanger.
  5. Eponger les aubergines avec du papier absorbant. A l’aide d’un pinceau, badigeonner les tranches d’aubergine d’un peu d’huile d’olive et enfourner 10min.
  6. Graisser légèrement l’intérieur de chaque ramequin à l’aide du pinceau. Ensuite, garnir chaque ramequin : disposer 2 tranches d’aubergines au fond, déposer une bonne cuillérée de farce et répartir sur l’aubergine, recouvrir de courgettes et tasser le tout. Déposer à nouveau une cuillérée de farce, bien répartir et terminer par 2tranches d’aubergine. Fermer les cocottes et enfourner 15min.
  7. Pendant ce temps, préparer le coulis : faire une petite croix sur les tomates puis les ébouillanter 30s afin de pouvoir enlever facilement leur peau.
  8. Couper-les en 4, ôter les pépins et le pédoncule puis mixer la chair. Mettre dans une petite casserole, ajouter le reste des ingrédients et faire chauffer une petite minute.
  9. Dressage des assiettes : laisser reposer les ramequins 5 min à température ambiante. Ensuite, renverser délicatement le ramequin sur chaque assiette. Arroser de coulis.

En entrée, compter un millefeuille par personne. En plat principal, prévoir 2 millefeuilles par personne. Servir avec du riz p. ex.
