Galettes croquantes de millet aux légumes, noix et chèvre

MIAM, nous nous sommes régalées en dégustant ces galettes savoureuses et dorées qui croquent sous la dent…Accompagnées d’une petite salade de doucette, elles sont parfaites et constituent un repas complet. Et, c’est une recette idéale pour déguster le millet, céréale plutôt méconnue…dont je ne raffole pas quand il est ,,nature’’. En revanche, il convient parfaitement à la version galette !  A vous de tester !

 

Recette pour 2 personnes

Ingrédients

  • 200g de millet (cru, entier)
  • 4dl d’eau
  • 1 carotte
  • 1 échalotte
  • 1 blanc de poireau
  • 8-10 noix hachées
  • 1 œuf
  • 1/2cc de sel, poivre
  • noix de muscade
  • 1 morceau de chèvre en bûche ou un crottin*
  • 1-2cs de farine**

 

     

    Marche à suivre

    1. Rincer le millet puis le mettre à cuire dans env. 4l d’eau. Réduire le feu après ébullition et laisser cuire doucement 15min. Quand il est cuit, mettre dans un saladier et laisser refroidir sur le rebord de la fenêtre.
    2. Pendant ce temps, râper la carotte, hacher l’échalote et détailler le blanc de poireau en fines demi-lunes… Puis, les faire revenir à feu doux dans une poêle dans un peu d’huile d’olive quelque minutes jusqu’à que les légumes soient tendres.
    3. Hacher les cerneaux de noix, les mélanger au millet cuit. Ajouter les légumes, sel, poivre, muscade et un œuf battu à la fourchette. Bien mélanger le tout.
    4. Constituer 6 galettes avec le mélange : prélever le mélange avec une cuillère à soupe et former une boule entre vos mains (préalablement enduites de farine) puis glisser le morceau de chèvre au cœur du mélange, bien serrer la boulette puis aplatir légèrement et mettre de côté. Faire de même avec le restant du mélange.
    5. Faire dorer les galettes 2-3 min de chaque côté dans une poêle anti-adhésive dans un peu d’huile d’olive.
    6. Servir avec une salade de doucette aromatisée l’huile de noix…

    *Pour ceux qui ne sont pas fans de chèvre, ils peuvent très bien faire une version avec de la mozzarella ou du gruyère, hein Mél ?!!
