Salade de lentilles à la mode thaïlandaise

Absorbée par un travail très prenant ces dernières semaines, je n’avais ni le temps ni l’envie de vraiment cuisiner.  Et pendant quelques jours, j’ai même cru avoir perdu mon inspiration…quel malheur me disais-je, et si ça ne revient jamais plus ?!! Et heureusement, concentrée devant mon ordi à faire de grandes et belles statistiques, j’ai soudain eu un rêve culinaire : une salade de lentilles, pas comme d’habitude, avec milles saveurs, des saveurs d’ailleurs…pour voyager un peu, pourquoi pas la Thaïlande. Et tac, ni une ni deux je suis partie en courses et je me suis mise à concrétiser cette vision.

Le résultat est très fin, les différentes saveurs arrivent par vagues et séduisent.

Recette pour 4 personnes

 Ingrédients

  • 2 verres de lentilles vertes du Pully ou lentilles beluga (lentilles fermes à la cuisson !)
  • 300g d’aubergine non épluchée coupée en dés
  • 2 tomates coupées en dés
  • 2 oignons nouveaux coupés en fines rondelles
  • une poignée de coriandre fraîche* grossièrement hachée

Sauce :

  • 4cs de tamari (ou sauce soja)
  • 1cs de sucre brun
  • ½ piment rouge épépiné haché finement
  • ½ à 1 gousse d’ail pilée (selon la taille)
  • 1 bonne noix de gingembre frais pressée (à l’aide du  presse-ail)
  • le jus de 2 limes (citron vert)
  • 1cs d’huile de tournesol
  • 3cs de lait de coco**
  • poivre, un peu de sel

 

Marche à suivre 

  1. Faites chauffer une cuillérée d’huile d’olive dans une poêle et y faire revenir l’aubergine env.10 min. Quand elle est tendre, retirer du feu et laisser refroidir.
  2. Faire cuire les lentilles dans le double de volume d’eau (selon le temps indiquer sur le paquet, 25 à 40 min selon la variété) jusqu’à évaporation du liquide. Elles doivent rester légèrement al-dente,  cuites mais pas encore purée. Laisser refroidir.
  3. Pendant ce temps, mélanger tous les ingrédients de la sauce (sauf l’huile et le lait de coco), bien mélanger afin de dissoudre le sucre et ajouter l’huile et le lait au mélange. Goûter, et faire mmh. Ajouter une pointe de sel s’il le faut (sachant qu’on ne sale aucun autre ingrédient.)
  4. Mélanger les lentilles encore tièdes, les tomates, les oignons, la coriandre et les dés d’aubergine à la sauce. Goûter et rectifier l’assaisonnement si besoin.
  5. Servir avec des pâtes de riz juste arrosées d’un filet d’huile d’olive pour un repas complet ou d’une simple salade verte pour un repas plus léger. 

 

*pour les personnes anti-coriandre, essayer le persil plat, mais selon moi, grande amatrice de coriandre, c’est trop dommage…

** Pour info, le lait de coco se congèle très bien. Si vous n’en avez pas l’utilité les jours suivants, vous pouvez donc congeler le reste de lait de coco pour votre prochain curry !
