Enfin des recettes après cette longue période de silence…et honneur toujours à la tarte salée mais avec une version plus estivale, nommée dans ma chaumière ‘’tarte à tout’’ ! Le principe des tartes salées, vous l’aurez compris, est si simple qu’elles sont devenues un véritable classique chez nous : bonne pâte maison, légumes du moment, herbettes, fromages en tout genre selon la garniture et parfois en prime des graines pour le côté croquant ! CQFD.

 

Recette pour 3-4 personnes

Ingrédients

  • pâte à tarte maison voir ici
  • 1 grosse courgette (ou deux petites) coupée en rondelles
  • 2 tomates coupées en demi-lunes
  • 1à 2 oignon(s) frais (de printemps) grossièrement haché(s)
  • 10 olives noires hachées
  • ½ à 1 boule de mozzarella en dés
  • 1 poignée de ruccola
  • une dizaine de feuilles de basilic
  • 1cs d’huile d’olive
  • 1cs d’eau
  • sel, poivre

 

 

Marche à suivre

  1. Étaler la pâte à tarte, piquer la avec une fourchette et disposer-y les olives hachées.
  2. Répartir les rondelles de courgette, puis les morceaux d’oignon et les tomates, saler, poivrer.
  3. Enfourner dans un four préchauffé à 200°, en bas du four env. 30 min.
  4. 5 à 10min avant la fin de la cuisson, répartir les dés de mozza, remettre au four, si besoin est un peu plus haut pour qu’elle soit belle dorée.
  5. Préparer un pesto express en mixant grossièrement rucola, basilic avec l’huile, l’eau, poivre.
  6. Répartir le pesto sur la tarte et déguster.

 

 

Variante du ,,jeune et tendre’’ plus rapide (et qui a fait ses preuves) : supprimer les olives et le pesto de la recette et tartiner le fond de pâte d’une bonne couche de moutarde, salez, poivrer. Ajouter des herbes séchées type ,,de provence’’ et du paprika sur les légumes… Et enfin ajouter des déchirures de jambon cru en même temps que la mozzarella… Les deux versions se valent !
