Taboulé à ma façon et son tsatziki de courgette

Des recettes de taboulé il y en a des centaines… Je vous présente la mienne ! Le caractère ,,innovant’’ de mon taboulé réside dans une sauce bien relevée qui lui donne une saveur exquise. En famille on a l’habitude de le servir avec des merguez…ce jour-là c’était des saucisses de tofu pimentées qui ont fait l’affaire. Le tout agrémenté d’un pseudo tsatziki de courgette…mmh quel repas frais et goûteux !

Recette pour 3-4 personnes

Ingrédients

  • 250g de grains de couscous
  • 3 tomates
  • ½ concombre
  • 1-2 oignon (s) de printemps
  • 1 botte de persil plat
  • ½ botte de menthe

Sauce

  • 1,75dl de bouillon de légumes corsé tiède
  • ½ cc de sel
  • le jus de 2 citrons pressés
  • 1cs de miel
  • ½ gousse d’ail pressée
  • 2cs d’huile d’olive
  • ½ cc de paprika fort ou 1 cc de harissa

tsatziki de courgette

  • 1 courgette de taille moyenne bien ferme*
  • 4cs de yaourt de brebis (ou de vache)
  • ¼ gousse d’ail
  • 1cs de jus de citron
  • 1cuillérée d’huile d’olive
  • sel, poivre

Marche à suivre

  1. Mélanger tous les ingrédients de la sauce et verser sur les grains de couscous encore crus.
  2. Couper les tomates en 4 et retirer les pépins. Détailler les ensuite en petits dés. Couper le concombre en deux dans la longueur puis encore une fois en deux dans la longueur. Retirer les pépins et détailler le concombre en petits dés. Saler légèrement les légumes. Hacher l’oignon, le persil et la menthe.
  3. Mélanger au couscous, couvrir et laisser reposer au frais 1h au moins.
  4. Râper la courgette non pelée, mélanger à tous les ingrédients, réserver au frais.
  5. Cuire merguez ou autres et servir avec le taboulé. Accompagner de tsatziki de courgette. Goûter, fermer les yeux : explosion de saveur !

*Prenez une courgette bien fraîche et bio (il faut laisser la peau)

    >Anna: Alors pour cette recette de taboulé je ne cuis jamais le couscous, c’est pourquoi il faut laisser le tout reposer minimum 1heure au frais…(une demi-journée est encore mieux!) C’est ce qui donne au taboulé une saveur toute particulière…(car le grain absorbe tout le bon goût de la sauce) Pour une recette express, tu peux bien sûr précuire la semoule (selon indication du paquet) et mélanger le tout une fois la semoule refroidie. Dans ce cas il te faut réduire également la quantité de liquide de la sauce (par exemple supprimer les 1,75dl de bouillon de légumes). Variante tout à fait ok mais tu vas perdre en saveur… Voilà, tiens moi au courant du résultat!!
