Hommage au Mali: Mafé de poulet ou poulet sauce arachide pour les non connaisseurs

Peut-être faites-vous partie, comme moi, des personnes ayant eu un véritable coup de cœur  lors d’un voyage? Personnellement, le mien s’est fait en 1999 alors que je foulais pour la 2ème fois la terre rouge du continent africain. Après 5 semaines passées à découvrir le Mali, ses richesses culturelles et son hospitalité hors pair, je me suis promise d’y revenir un jour. Et ce fut le cas. Sept ans plus tard, j’arrivais en compagnie de mon futur mari, par le train Dakar-Bamako, pour un séjour qui nous mena par voie fluviale à la ville sainte de Tombouctou et à l’envoûtant Pays dogon en passant par la Venise malienne, Mopti.  

Vous imaginez quel est mon désarroi aujourd’hui lorsque le lis dans les journaux tous les maux qui gangrènent le pays… Afin de rendre au Mali la belle place qu’il occupe dans mon cœur, j’ai eu envie de lui rendre hommage en lui dédiant cette recette… Une manière de témoigner, à ma façon, à ses habitants et en particulier à mon ami Moussa toute ma sympathie en ces jours graves.

 

Recette de mafé* pour 4 personnes

Ingrédients

  • 4 cuisses de poulet (ou un poulet entier)
  • 3 oignons
  • 3 cs de beurre de cacahouètes (vous pouvez le faire maison si vous le souhaitez!)
  • 400 ml de bouillon de poulet
  • 3 tomates
  • 1 citron
  • 1 pointe de piment en poudre
  • sel et poivre
  • huile végétale (j’ai pris de l’huile d’olive)
  • Manioc ou carottes selon les envies (je n’en avais pas ce soir-là)
  • riz pour accompagner

Marche à suivre

  1. Couper le poulet en différents morceaux; séparer le bas du haut de la cuisse. Réserver.
  2. Emincer les oignons. Couper les tomates en huit.
  3. Verser de l’huile dans une cocotte ou poêle à fond épais. Faire revenir les oignons pendant une dizaine de minutes à feu moyen.
  4. Ajouter le poulet et le laisser dorer de tous les côtés pendant 15 minutes environ.
  5. Quand le poulet est bien saisi, ajouter les morceaux de tomates et remuer le tout. Verser la moitié du bouillon de poulet et laisser le liquide diminuer sur le feu.
  6. Si vous souhaitez incorporer des carottes, du manioc etc.. c’est le moment de le faire.
  7. Assaisonner avec le poivre, le piment et le sel.
  8. Laisser mijoter le tout entre 40 min et 1 heure à feu doux en remuant de temps à autre. Ajouter un peu de bouillon s’il venait à en manquer.
Sauce arachide
  1. Exprimer le jus d’un citron. Réserver.
  2. Déposer 3 bonnes cs de beurre de cacahouètes dans un bol.
  3. Prélever une louche du jus de cuisson et le verser dans le bol. Ajouter le jus de citron et remuer le tout de sorte à obtenir un mélange fluide.
  4. Verser le mélange obtenu sur le poulet et laisser ainsi mijoter encore 5 minutes.
  5. Servir le tout avec un riz blanc
