Voici la recette d’une soupe de lentilles rustique et réconfortante qui sera parfaite pour un repas hivernal. Plus il fait moche dehors, meilleure est cette soupe ! Je n’hésite pas à en préparer une bonne quantité, ce qui me permet ensuite de congeler 2-3 portions pour un soir de grande flemme.

Ingredients
  • 2cs huile d’olive
  • 120g de lentilles vertes
  • 1 oignon
  • 1poireau
  • 2 gousses d’ail pressées
  • 1 carotte
  • ½ fenouil
  • 250g de courge butternut
  • 2 pommes de terre
  • 1cs de concentré de tomates
  • 300ml de tomates concassées en boîte
  • 1l de bouillon de légumes
  • ¼ cc de paprika
  • ½ cc de curry
  • ½ cc de curcuma
  • 2 feuilles de laurier
Instructions
  1. Emincer l’oignon. Supprimer env.1/3 du vert du poireau, le couper en 2 dans la longueur, le nettoyer puis le couper en rondelles.
  2. Faire revenir l’oignon, le poireau et les gousses d’ail (pressées) dans une grande casserole dans 2 cs d’huile d’olive à feu doux env. 5 min.
  3. Pendant ce temps, éplucher la carotte, le butternut et les pommes de terre. Couper le tout en dés/rondelles d’env. 2cm et couper le fenouil en morceau de taille identique.
  4. Verser les légumes dans la casserole, ajouter les lentilles, le concentré de tomates, les tomates concassées, le bouillon de légumes chaud ainsi que les épices, saler, poivrer, porter à ébullition, couvrir et laisser mijoter env. 35min.
  5. Arroser d’un filet d’une bonne huile d’olive et servir avec une tranche de pain grillée.
