C’est trop bon, c’est original, ça demande peu d’apprêts et surtout ça mijote tout seul ! Youpee ! J’en fais souvent et je varie les ingrédients mais voici une variante gagnante… à adapter selon les goûts et les envies du moments.
Recette pour 4 personnes
Ingrédients
- 1 oignon
- 1 gousse d’ail
- 3cs d’huile d’olive
- 1cc de coriandre
- 1cc de gingembre en poudre
- ½ cc de cumin
- ½ cc de sel, poivre
- 1 bâton de cannelle
- 3dl de bouillon de légumes corsé chaud
- 10 pistils de safran
- 200g d’abricots secs*
- 40g d’amandes effilées
- 600g d’agneau coupé dans l’épaule en morceaux*
Marche à suivre
- Emincer finement l’oignon et l’ail.
- Faire chauffer 1cs d’huile d’olive dans une cocotte. Saisir la viande à feu très vif 1-2 min pour qu’elle colore, selon la taille de la cocotte procéder en 2 fois, réserver la viande de côté.
- Baisser le feu, faire revenir l’oignon à feu doux dans l’huile restante pendant 5min, puis ajouter l’ail et les épices (sauf le safran) et laisser embaumer 1-2min.
- Ajouter la viande, mouiller avec le bouillon, bien déglacer le fond de la cocotte en raclant avec une spatule et laisser mijoter à feu très doux pendant 1h15.
- Ajouter le safran et les abricots 20-30min avant la fin de la cuisson.
- Chauffer une petite poêle et faire dorer les amandes effilées sans ajouter de matière grasse.
Servir le tajine avec de la semoule (grains de couscous), bien arroser de sauce et parsemer d’amandes effilées.
* Vous pouvez remplacer les abricots par des pruneaux séchés et/ou des figues séchées, c’est également délicieux, j’adore les 2 variantes.
**Pour une version un peu plus onéreuse, vous pouvez prendre du gigot coupé en morceaux mais il faut réduire le temps de cuisson à env. 30min.
