Yaourts maison: le début d’une grande tradition familiale?

Je ne sais pas si vous aussi vous gardez en mémoire certains souvenirs d’enfance comme des événements qui se sont produits de nombreuses fois avec un certain rituel… Et lorsque vous demandez des détails à vos parents, ils vous disent que certes vous avez effectivement mangé de la glace faite maison chaque été ou que vous êtes bien allés 2-3 fois dans ce fabuleux restaurant, mais qu’enfin cela ne s’est pas produit 1’000 fois non plus… Bref… Tout ça pour dire qu’entre imagination et souvenirs, il y a parfois un grand saut, mais qu’est-ce que c’est bon de rêver et se rappeler des souvenirs qui nous paraissent mythiques! Pour moi, les yaourts maison font partie de cette catégorie, tout comme les glaces à la fraise de notre maman ou les soirées “cinéma” où notre Papa nous passait les vidéos super8 dans le salon avec un grand projecteur.

Voilà qu’il y a quelques jours, j’ai pu me replonger dans un agérable souvenir en dégustant un savoureux yaourt nature fabriqué par le père d’une amie et servi dans un joli petit pot en verre. Bon, il faut dire que le contexte s’y prêtait bien: un chalet familial lové au fond d’un vallon enchanteur, des couleurs automnales, une veranda confortable où crépite un vieux poêle avec les Alpes et le lac en toile de fond… Le paradis!

De retour à la civilisation, j’ai couru (ou presque…) acheter des petits pots en verre Weck, du lait frais et un yaourt mère et j’ai à mon tour réalisé 6 magnifiques yaourts. Résultat: cela a été la guerre à la maison pour défendre mon butin! Petit et grand ont voulu les goûter tout de suite et il a fallu que je négocie! Et quand je vois les étoiles dans leurs yeux quand ils les savourent, je me dis que nous assistons à la naissance d’une grande tradition familiale! Voici donc la recette de base! Essayez: c’est simple, magique et tellement meilleur que n’importe quel yaourt acheté dans le commerce! Ensuite, une fois que vous vous serez fait la main, à vous d’ajouter des arômes ou des fantaisies…

Recette pour 6 yaourts de 160 ml

Ingrédients et ustensiles

  • 8 dl de lait entier pasteurisé (j’ai pris du lait bio frais de la Migros)
  • 1 yaourt nature de 125g (on m’a conseillé celui de la marque Spasseff)
  • 1 four conventionnel
  • 6 petits pots en verre avec couvercles (Weck par exemple)

Marche à suivre

  1. Mélanger le lait et le yaourt dans une casserole à feu doux jusqu’à ce qu’ils tiédissent. Pour vérifier la température, tremper un doigt et sentir que le liquide est à peine plus chaud ( 38-41°C).
  2. Verser le contenu de la casserole dans 6 petits pots en verre. Placer les couvercles.
  3. Enfourner dans un four préchauffé à 40°C pendant 2 heures. Eteindre le four et laisser ainsi, porte fermée, les yaourts pendant encore 4 à 6 heures. Au bout d’un certain temps, vérifier leur fermeté. Plus les yaourts restent au chaud, plus ils deviennent fermes.
  4. Placer les yaourts directement au frigo à leur sortie du four. Et déguster! Les yaourts se gardent une semaine à 5°C, mais auront-ils vraiment le temps de connaître le fond du frigo s’ils sont si réussis?
