Risotto à la betterave : pink party!

On n’a peu l’habitude de trouver dans son assiette des couleurs telles que le rose ou le bleu… Pourtant elles font leur effet au niveau des pupilles, surtout en période froide! Du coup, l’autre soir après une journée passée sous la grisaille, j’avais envie de mettre une petite touche d’originalité sur notre table. Résultat, j’ai cuisiné un risotto à la betterave inspiré du livre “Risotto”, éd. Marabout, 2004. J’en ai encore rajouté au niveau décoration avec un chemin de table, des verres et des serviettes roses… Bref, on s’est fait une véritable pink party familiale et tout le monde était heureux!

Recette pour 6 personnes

Ingrédients

  • 400 g de riz Carnaroli
  • 1.5  l bouillon de boeuf
  • 15 cl de vin blanc sec
  • 3 échalotes finement hachées
  • 100 g de mascarpone
  • 2 cs huile d’olive
  • parmesan râpé
  • sel poivre
Pour la purée de betterave:
  •  3 petites betteraves cuites coupées en carrés
  • 2 échalotes finement hachées
  • 1 cs huile d’olive
  • sel, poivre

Marche à suivre

  1. Purée de betterave: faire revenir dans une casserole les échalotes finement hachées avec l’huile d’olive. Les mixer avec les betteraves cuites, saler et poivrer. Réserver.
  2. Dans une casserole à fond épais, faire revenir à feu doux les échalotes avec l’huile d’olive. Verser le riz et le mélanger sur feu vif pendant 2 minutes.
  3. Mouiller avec le vin, laisser évaporer en remuant, puis verser le bouillon au fur et à mesure que le riz l’absorbe. Mélanger régulièrement.
  4. Cinq minutes avant la fin de la cuisson du riz (au bout de 13 min environ), ajouter la purée de betterave.
  5. Dès que le riz est cuit, rectifier l’assaisonnement et incorporer le mascarpone. Couvrir et laisser reposer 2 minutes.
  6. Servir cette belle préparation rose avec un peu de parmesan râpé.
